Chefsprobono is a Brisbane group of chefs and cooks that met on twitter and got together to raise money for charity.
This is the 4th event that they have held. Seafood is featured in all of their menus. They have 5 chefs for this event teamed with the a selection of cooks.
Our Executive Chef for this event, and all our previous events, is Travis Grig "Stix". The past owner of Grub St Cafe, he loves to share his passion for great food. An inspiring chef who recently attended Mad Symposium 3 and is now handcrafting furniture.
Chris Gilson "The Madtyke" is a classical chef who trained at the Dorchester, in London. Chris has more recently been involved in teaching the next generations of Aussie chefs, ensuring classical cooking continues.
Troy Bedford "A Wicked Edge" is a former Executive Chef and was Chef de Cuisine of "Carriages" at the Sheraton Hotel, Brisbane. Troy left the kitchen to spend more time with his family and now he is the knife sharpener to the best chefs and us cooks.
Danielle Dixon has done the hard yards and become a respected Chef after being in the top 12 on Masterchef. Currently Danielle is Resident Chef at Hive.
Gemma "with a G" Liston is a talented Pastry Chef and fights the good battle against Brisbane's hot weather. Gemma is currently working at Blackbird.
Ben Wrigly is the Executive Chef of the Plough Inn and has offered to share his signature smoking with us for this event. Ben is great mates with Kristy's brother, Jay.
Emily Loo is an Apprentice Chef at GOMA after this years Masterchef. Emily joins us to help make the day special.
Bennett is new to the team. Bennett was a chef in Taiwan, but his qualification is not recognised in Aust. . I think Bennett will be great in our team.
Paul Chambers "Booma" is the organiser who works at the fish markets. The seafood industry generously helps to create these events with me.
Neil "VJ" owns VJ Seafoods with his family and shares his passion for preparing & cooking beautiful seafood.
Lisa Sylvester is our Head Waitress and live tweeter. Lisa creates a front of house for everybody to enjoy.
Fleur Cole is Junior Branch Manager with Thermomix and is leading the Thermomix powered Salad Bar.
Andrew "line caught" Reay is a Brisbane specialist in sashimi wholesale and just loves to get involved and help in our charity events.
Jess Chambers is a kid learning to work in a talented team.
Our previous events.
Our first event was at Vanilla Zulu and raised about $700 for Youngcare. We had a fun night cooking a huge variety of seafood.
We held the biggest MS Big Dinner Party and raised the most in 2013. A fabulous night raising $5,500 for the MS Society.
A small event back at Vanilla Zulu to help Youngcare and work on ideas for future events. We raised about $400 in a relax and fun atmosphere.
